I never pass up a crispy, bacon wrapped appetizer and now that there are so many sugar free alternatives, I don’t have to give-up that salty/sweet bite.

I’m am also happy I don’t have to give-up on a honey craving eating keto. With so many honey substitutes, the one I chose is the closest to the flavor of honey.

I’m going to do a product comparison of keto/low carb honey and maple syrups substitutes so stay tuned and you will get to read about my findings.

To give the bacon an extra sweetness boost and to help it get a little caramelized in the oven,  I like to brush them with the honey before baking.

I mean, even if you’re not the best cook, anyone can roll bacon around a water chestnut and bake them, right?

I serve these as appetizers with drinks, game day watching and even alongside a salad for an easy and fast dinner.

A quick baking tip when you put them in the oven is use a wire cooling rack inside a metal baking sheet. This way, the heat circulates all around the bacon and the grease drips into the pan so the bottom is crispy too.

Bacon Wrapped Water Chestnuts with Low Carb Honey

Prep Time: 5 minutes
Cook Time: 30 minutes
Total Time: 35 minutes

Simple water chestnuts wrapped in bacon then baked until crispy. Serve with a low carb honey.

Ingredients

  • 16 ounces (454 grams) whole water chestnuts (about 16) drain, rinse and dry
  • 16 slices sugar free bacon
  • 5 tablespoons sugar free honey * see note

Instructions

  1. Preheat oven to 400°F/200°C.
  2. Wrap a slice of bacon around each water chestnut, only in a single layer and slightly overlap the ends. Trim the rest of the bacon and secure with a toothpick.
  3. Brush each of the outside of the bacon using 1 tablespoon honey. Place them onto a rack set inside a backing sheet. Bake for 30 minutes, or until the bacon is crispy and brown.
  4. Serve with the remaining 4 tablespoons honey.
